The WHO/FAO's recommended intake of salt is 5 g/day. However, the average daily salt consumption of the western world is between 10 and 12 g/day. Over 80% of salt intake usually comes from processed food.
Not only does increased salt intake elevate the risk of heart disease, but increased consumption of salted foods might also elevate risk of cancer. A new study of 80,000 men and women showed that eating highly salted foods like salted fish roe increased cancer by 15% and cardiovascular disease (CVD) by 20%.
It is not the sodium or the salt itself that linked to the cancer risk, but the consumption of salted foods that impacted the study. One possible explanation could be the presence of N-nitroso, a carcinogen present in preservatives. Another explanation could be the destruction of gastric mucosal barrier by a high intragastric salt concentration, which leads to diffuse erosion, inflammation, and degeneration.
