A new study done by the Mayo Clinic in Minnesota has found that people who consume more vitamin K (108 micrograms a day) in their diet have 45% less risk in developing non-Hodgkin lymphoma compared to those who took less than 39 micrograms a day. Experts theorize that vitamin K, originally recognized for its effect on blood coagulation, might inhibit inflammatory cytokines, which works in cell cycle arrest and cell death in Non-Hodgkin lymphoma.
The most widespread hematologic malignancy in the US is Non-Hodgkin Lymphoma, cancer of the immune system. The cancer starts in the lymphatic system and includes around 29 different kinds of lymphoma. The American Cancer Society has recorded over 50,000 new cases of Non-Hodgkin Lymphoma every year.
Vitamin K, a fat-soluble vitamin, can be found in plants or bacterial synthesis. There are two types of Viamin K: K1 (phylloquinone) and K2 (menaquinone). The most common vitamin K1 source in our diet is from vegetables. This includes broccoli, spinach, leaf lettuce, vegetable oils, and fruits. K2 can be obtained from animal meets or fermented food prodcuts like cheese and natto. A diet that includes lots of green leafy vegetables can help prevent not only Non-Hodgkin Lymphoma, but many other cancers as well.
