A new study finds that antioxidant-rich pistachios have the ability to improve heart health and reduce cardiovascular disease risk. Those who take more pistachios have higher levels of serum antioxidants and less LDL cholesterol (bad cholesterol) than those who do not take any pistachios.
Antioxidants are of interest because oxidized they prevent LDLs from oxidizing, migrating into the blood vessel walls and causing inflammation. If antioxidants are important, then pistachios should fit the bill as antioxidant-laden food.
Pistachios contain high amounts of b-carotene, g-tocopherol and lutein. Beta-carotene is the precursor to vitamin A and gamma-tocopherol is a common form of vitamin E. Lutein is found in dark green leafy vegetables and is important in vision and healthy skin. All three compounds are oil soluble vitamins. Pistachios also protect the heart by lowering oxidized LDL levels. Pistachios were also found to decrease cholesterol and blood pressure and lessen inflammation at the cellular level.
