Nutrition & Metabolism provides a study that shows that consuming high amounts of fruits and vegetables can decrease inflammation markers connected to many other chronic diseases. They recommend consuming at least 5 servings of fruits and vegetables a day. Nutrigenomic techniques are used to teach scientists the interaction between diet and gene expression.
Adults who eat high levels of fruits and vegetables have lower levels of inflammatory markers in white blood cells, which therefore decrease the risk of developing chronic inflammation connected to cardiovascular disease, type-2 diabetes, arthritis, osteoporosis, mental health decline, and Alzheimer's disease. Some of the markers of inflammation include C-reactive protein (CRP), interleukin-6 (IL-6) and tumor necrosis factor-alpha (TNF-alpha).
The study consisted of 120 people who had an average age of 20.8 and average BMI of 22.3 kg/m2. Intake of fruit and vegetables were measured through food-frequency survey and the levels of inflammatory markers were quantified by the mRNA expression in white blood cells. Results showed that eating more fruits and vegetables lowered the proinflammatory agents in white blood cells.
