Those with type 2 diabetes have bodies who cannot process sugar appropriately and therefore causes high blood sugar content. This disease can be kept in check by diet and exercise and even drugs. Current nutritional guides recommend that half of the carbohydrate intake of the diet come from whole grains. Most of the rice that Americans eat is refined white rice whose fibers, minerals, and vitamins have been removed. This leads to an increase in blood sugar that does not come from eating whole grain rice.
Researchers now show that people who eat brown rice or other whole grains have a smaller chance of contracting diabetes compared to those who eat white rice. The 22-year American study consisted of more than 197,000 adults. Around 10,500 developed type 2 diabetes over the years.
Results showed that those who ate the most white rice (more than 5 servings per week) had elevated diabetes risk by 17% compared to those who ate the least white rice ( less than 1 serving a month). On the other hand, eating more than 2 servings of brown rice per week had a 11% reduction in risk of developing diabetes compared to those who ate less than 1 serving of brown rice a month. The researchers estimate that substituting white rice for whole grains could reduce risk as great as 36%.
