Trans Fat and High Fructose Harm The Liver

Researchers at Cincinnati Children's Hospital Medical Center have found that high fructose and trans fat levels in the body elevate risk of developing obesity. Not only that, but it also gives rise to amplified scar tissues that come with fatty liver disease. In the United States, fructose is 10.2% of the average caloric intake. It has been closely associated with heart disease, liver disease, and obesity. Many food and drink manufacturers use High Fructose Corn Sweetener (HFC) to replace sugar because it is cheaper. Trans fat is used more because it has a longer shelf life compared to other types of cooking oils.

The study was based on a mouse modeling after human disease. There were two groups: one with a regular diet of rodent food and one given a diet high in HFC water and trans fat solids for 16 weeks. The liver tissue was then examined for fibrosis (formation) of scar tissue, fat content, and damage. The measurement was done through reactive oxygen stress, blood levels of oxidative stress markers, and inflammatory cell forms, all which help clue in to the development of liver disease.

Results showed that the mice that ate the regular rat chow diet stayed skinny and did not develop fatty liver disease. However, those who ate the high caloric diets (either trans fat alone or both trans-fat and HGC) became overweight and developed fatty liver disease. The group who had the worst conditions (trans-fat and HFC diet) not only developed advanced fatty liver disease, but also fibrosis and higher oxidative stress in the liver, a larger number of inflammatory cells, and increased levels of plasma oxidative stress markers.
