Bok Choy Pineapple Salad

Bok Choy is a member of the cabbage family in the Asian cuisine. It is high in vitamin A, C, beta-carotene which can help to reduce the risk of certain cancers.

Recipe

2 cups Chopped Bok Choy
1/2 cup pineapple tidbits, drained.
1/2 cup organic cherry tomatoes
1/2 tsp chopped ginger

Mix all ingredients in mixing bowl.
Add Sauce:
2 tbsp Oil
1 tsp Sesame oil
1 tbsp Hoisin Sauce
1 tbsp Vegetarian Oyster SauceTossed.
Serve in chilled bowls.
Sprinkle pre-soaked and dehydrated sunflower seeds

 


Note of Caution:

  1. For Estrogen Dominance and Hypothyroid – substitute mixed green lettuce for Bok Choy. You should take the cruciferous vegetables twice a week only.
  2. For Allergies or Cancer. Substitute sea salt for mushroom extract seasoning. May use flax seed oil instead of olive oil as a substitute.
  3. For Weight Loss – don’t be afraid of the oil. The oil helps maintain the satiety and prevent you from getting hungry until the next meal.

Soup Base
These two recipes can be made ahead of time and stored in glass jars in the fridge. I find it quite tasty to use this soup base to blend with raw vegetables to create a cream soup. It is full of vitamins, minerals and phytonutrients for the body. I use soup Base 1 when the raw vegetables are darker in color, such as green and red. Soup base 2 is for light vegetables, such as onions, yellow bell peppers, and potatoes.
Dr. Lam's Cream
This is a non-dairy cream. Great for those who are lactose intolerance. On top of that, it is high in fiber.
