Adrenal Fatigue Diet- Delicious Summer Squash Butter

Delicious Summer Squash that can be found at your local storeThis is a great recipe for the summer where you can find lots of summer squashes. Here are some benefits for eating vegetables in season. It is cheaper when you buy in seasons where the vegetables are in abundance. The food taste better in season, because they are fresh and maintain their fluid. Seasonal foods are such an important part of the adrenal fatigue diet for many reasons. If we grow foods that are seasonal, we can rotate out the crops for the next batch of seasonal crops. If we pick them while in season, we get the highest quality nutrients combined with the most flavorful taste, and this generally allows for the lowest prices as well, as the food is more abundant and easier to find. This is a great thing for the environment as well, as it reduces how far your food has to travel to reach your table. If you have a local farmer’s market, you can find these locally and organically grown as well.

Summer squash is a very good source of vitamin C, which is an important facet of the overall adrenal fatigue diet. It also contains many other antioxidant nutrients, including carotenoids lutein and zeaxanthin. Do not remove the skin since it is particularly rich in antioxidant.

Ingredients A:
2 lbs zucchini and yellow crookneck squash coarsely grate and drain.
¼ cup butter

Ingredients B:
2 clove garlic, minced
1 small white or yellow onion, finely chopped

Ingredients C:
2 tsp finely chopped fresh basil leave or fresh mint leaves
salt and pepper to taste


  1. Put the grated summer squash in a clean cloth towel. Wring and squeeze out the excess water.
  2. In a wok or large frying pan, melt the butter.
  3. Add in Ingredients B and sauté.
  4. Add summer squash and cook over medium to medium-high heat. Stir constantly. Turn down heat if the squash scotch the bottom. Splash water as needed.
  5. Cook until the summer squash is soft and spreadable.
  6. Turn off heat. Stir in Ingredients C.
  7. Enjoy on a piece of toast.
