Buckwheat Apple Granola Bar Snack

Grains used in this snackThe varying degrees of chopped nuts, seeds, and fruits give this granola an amazing texture.

Ingredients A:

  • 1 cups cooked buckwheat
  • 3 organic apples, cored and cubed
  • 30 dates, pitted and soaked in water for 15 mins
  • 1 tsp cinnamon, (optional)
  • ¼ cup raw sunflower seed
  • ½ cup raw honey
  • 1 tsp salt

Ingredients B:

  • ½ cup Cranraisins
  • 1 cup dried apricots
  • ¼ cup raw sunflower seeds
  • ½ cup raw almonds

Ingredients C:

  • 1 cup raw rolled oats
  • 1 cup cooked buckwheat
  • ½ cup raw almond, coarsely chopped
  • 1 cup raw sunflower seeds
  • ½ cup Cranraisins

Directions:

  1. Follow cooking instructions to make 2 cups of cooked buckwheat.
  2. In a food processor, place Ingredients A, grind until smooth. Transfer the mixture to a large mixing bowl.
  3. Add Ingredients B into the food processor, coarsely chop the nuts, seeds, and fruit in a few quick pulses. Add them to the bowl with the Ingredient A mixture and combine well.
  4. Add Ingredient C to the mixture and combine.
  5. Form into rectangular bars 1/2 inch thick. If the dough is too moist, add a pinch more oats to the mixture. The dough should be sticky but not runny.
  6. Place on dehydrator trays and dehydrate at 135 degrees for 4 hours. Flip the bars over and continue dehydrating for another hour, depending on how chewy and moist you prefer your granola bars. If you prefer very crunchy granola bars, then dehydrate for another 4 hours after flipping.
  7. Store in air tight container or freezer.
