Detoxifying Turmeric Miso Soup
- 1 tsp olive oil
- 2 clove garlic, minced
- 1 ½ inch fresh ginger, minced
- 1 green chili, sliced
- ¾ cup shredded carrots
- ¾ cup bell pepper, thinly sliced
- Shredded vegetables of your choice such as cabbage, broccoli, etc. (optional)
- ½ tsp turmeric
- ½ cup firm tofu, cut into 1-inch cubes
- 1 tsp brown sugar
- 2 tsp soy sauce or tamari
- 1 tsp apple cider vinegar
- 3 to 3.5 cups water
- 1 tbsp white miso
- Salt and pepper to taste
- Ground pepper for garnish
- In a saucepan over medium heat sauté olive oil, garlic, ginger, and chili for about 3 min until they are translucent.
- Next, toss in the shredded carrots, bell pepper, other veggies, and turmeric, and sauté for a while before adding in tofu. Sauté for another minute.
- Now, stir in brown sugar, soy sauce, vinegar, and the water. Bring to a boil and simmer for few minutes. Switch off the heat before stirring in miso. Add salt and pepper to taste.
