As a kid the idea of eating vegetables or not eating them were not based on health and nutrition at all, it was the idea that most vegetables looked or tasted gross. In a study conducted by a team led by Viktor Oskarsson at the Karolinska Institute in Stockholm, Sweden, it has been inferred that eating generous quantities of vegetables everyday can almost halve the likelihood of acute pancreatitis. The findings of the study have been published in the journal Gut.
Dr. Oskarsson and his team studied 80,000 adults in Sweden for a period of 11 years. In 1997, the team had documented the diets that all the people participating in the research. After 11 years of observing and examining them, the team found that 320 people suffered from different severity levels of acute pancreatitis. These people did not have gallstones which can otherwise establish the cause of the ailment.
The people studied consumed about two servings of fruit and about two and a half servings of vegetables each day on an average. After going through the observations and findings, it was found that those who consumed about four servings of vegetables were 44% less likely to develop acute pancreatitis. It was also noted that the amount of fruits consumed had no positive or negative impacts on pancreatitis. However, fruits rich in fructose can worsen the condition once it is formed.
The primary objective of the research was to understand the correlation between the risk of acute pancreatitis and antioxidant levels that are affected by the foods one consumes. It was inferred that eating more vegetables can protect the pancreas and phenomenally reduce the risks of developing acute pancreatitis. While eating more vegetables is better, eating vegetables in small servings can also protect the pancreas to an extent.
