Ingredients A

  • 1 cup warm water
  • 2 ¼ tsp yeast

Ingredients B

  • ½ tsp sea salt
  • ¼ tsp sugar
  • 2 cups all-purpose flour
  • 1 ½ cups whole wheat flour
  • 2 tbsp olive oil

Ingredients C

  • 1 cup sweet potatoes, cooked and mashed
  • 1 tbsp olive oil

Method

  1. Combine ingredients A in a small bowl. Cover with a lid and set aside for about 5 min.
  2. Combine ingredients B in another bowl to get a crumbly mixture. Then add ingredients A into the bowl and mix. Your mixture should still be a bit crumbly.
  3. Transfer ingredients C into the bowl, except the oil. Knead until you get a dough-like texture, then shape into a ball. Now add the oil and gently roll the dough around until it’s well coated.
  4. Cover the bowl with a clean muslin cloth and set aside in a warm place for about 60 min or until the dough has risen (increased in size).
