Rice and Celery Soup
This rice and celery soup is great to drink if you have a cold, it is easy for digestion
2 tbsp olive oil
3 tbsp butter
8 oz. celery stalks, finely chopped
2 tbsp fresh parsley, finely chopped
1 bay leaf
5 cups vegetable stock
Salt to taste
1 ¼ cup short-grain rice
- Put Ingredients A in large soup pot, cover and cook over low heat, simmer until vegetables are tender, around 10-15 minutes. Stir often.
- Add in Ingredients B. Bring to boil then reduce to low heat. Cover and simmer for 5 minutes.
- Add Ingredients C. Simmer till tender, 15 minutes.
- Remove bay leaf.
- Serve hot. Sprinkle with Parmesan.
