Creamy Chicken Salad Recipe

If possible, try to choose organic and hormone-free ingredients.


    • 1 ½ tbsp extra virgin olive oil
    • ½ cup panko

Creamy chicken salad with cayenne

  • ¼ tsp cayenne
  • ¼ tsp salt
  • Leaves of 2 small organic Bibb lettuce
  • 2 ½ cups shredded organic chicken, cooked
  • 4 radishes, finely shredded
  • ¼ cup fresh chives, chopped
  • 1 ½ cup cherries, pitted and halved

Salad Dressing:

  • ½ cup mayonnaise
  • 3 tbsp horseradish, cooked
  • Juice of 1 lime
  • Salt and pepper to taste


  1. Pour olive oil in a pan over medium heat. Add panko, cayenne, and salt to the pan and sauté them until panko is browned. Transfer to a paper towel and allow to cool at room temperature.
  2. To make the salad dressing, place the mayonnaise, horseradish, lime juice, and salt and pepper into a blender and blend until smooth and creamy. Transfer the salad dressing into a large bowl.
  3. Add the lettuce, chicken, radishes, chives, and cherries into the dressing, along with half of the mixed panko. Toss to coat the ingredients with the dressing. Then check the seasoning and add more pepper and salt if required.
  4. Sprinkle remaining mixed panko on top. Refrigerate and serve chilled.

Useful tip: This salad can be stored in the refrigerator for up to two days.
